Help.

I have an 89 Ranger, manual transmission, and when I bought it the speedometer was off by 10 mph. Nothing too bad. Well, some days ago the transmission was swapped, due to failure. Once I got my truck back I noticed the speedometer was even further off. I just drove 75 miles and the last portion was on the interstate(70mph speed limit). The max speed on the Speedo is 85mph. I have my phone gps speedometer because the trucks was unusable. Well. Heres my problem. I was only going 65 and the speedometer read 85 and I wasnt able to accelerate any further. I could but as soon as it hit 66 the truck would stutter and jerk and slow back down. Would removing the speed sensor from the transmission and running it with no speedometer cause any problems?
